Getting back in the swing of things + lunches 82-86

Who’s got her second kid in school now after three months of maternity leave and six months of being half caretaker half fit-a-full-time-job-into-a-part-time-schedule person? THIS LADY. And I’m finally feeling human again! As if that were not gift enough, I have discovered a new Fun Thing, that I’m officially dubbing “Big Lunch Little Lunch.” Honestly, Planetbox should just add me to the payroll.

Here are my boys’ lunches for baby’s first week.

82. Roasted eggplant with za’atar, spiced chickpeas, pears, & a fresh salad for Simon (cucumber, tomato, radish, bell pepper, parsley & cilantro, lemon vinaigrette)IMG_599883. Scrambled eggs, tortilla, sautéed mushrooms & green peppers, pear & berries, ham for SimonIMG_600284. Sweet potato, roasted broccoli, olives, berries, ham for Simon (kid loves his ham)IMG_600485. Re-purposed taco night: shredded taco chicken, black beans mixed w salsa, guacamole, tortillas, queso fresco, olives, pear & berriesIMG_600786. Salmon, yellow rice, roasted brussels sprouts, berries57585824058__F255C9BB-ED81-4365-AB32-571F701CC657

Hope that leaves you with some inspiration! I, for one, am always on the lookout for new lunch ideas. I suspect as these kids get bigger, our meager re-purposed leftovers aren’t going to cut it anymore. What are your go-to’s for your kiddos lunch boxes?
