This is one of Sophia’s favorite foods. The first time she saw them, she just went “Ball!” – then discovered that you could actually eat these balls… and ever since she has been in love. I hope you enjoy the recipe as well.
- 2 lbs ground pork
- 1 small grated zucchini
- Half onion finely chopped (large chunks don’t get cooked enough)
- 1 cup whole-grain breadcrumbs (can substitute for any breadcrumb you like)
- 2 eggs
- Salt, pepper, basil, and garlic powder to taste – be generous with your seasonings
Preheat oven to 350 degrees Fahrenheit. Get one sheet pan lined with parchment paper.
Mix all the ingredients by hand. Once thoroughly mixed, form balls and place them on your pan, making sure they do not touch. This recipe makes about 30 medium-sized meatballs.
Since I make this quite often, I recently bought a meatball maker, and it worked quite well… I thought the meat would stick to it, but it didn’t. It made the process faster, I got even sized meatballs, and the texture was actually better because the meat was not pressed as hard as I do with my hands. If you make meatballs often, I recommend it. There are several models, the one I used is pictured here.
Place in the oven for about 20-30 minutes or until thoroughly cooked with an internal temperature of 165 degrees Fahrenheit.
