Summer salads

I can’t say these recipes are especially kid-friendly, but I can say they are great additions to the fridge in the summer for work day lunches or to take to the neighborhood or family cookout. And, they easily accommodate extra CSA summer onslaught of summer squash, corn and tomatoes.

Grilled zucchini, squash and corn salad with cilantro lime dressingPicture1

  • 5-7 medium zucchini or summer squash
  • olive oil
  • salt and pepper
  • 3-4 ears of corn
  • 3-4 avocados


  • 3/4 cup packed cilantro leaves
  • ½ cup olive oil
  • juice of 2 limes
  • 2-3 tbsp apple cider vinegar
  • 2 cloves garlic
  • optional ¼ tsp chipotle powder or chili powder
  • salt and pepper to taste

Combine all dressing ingredients in a blender and process until smooth (tip: double the ingredients and save some for future salad or as a marinade!) Cut zucchini and squash lengthwise into halves, brush with olive oil and salt and pepper. Soak corn in its husk in water for 10 minutes, remove set aside. Grill squash, zucchini and corn. Remove and let cool. Cut cooled squash and zucchini into ½ inch pieces. Husk corn and cut kernels from cob. Cut avocados into ½ inch pieces. Mix all vegetables in a medium bowl and toss to combine with dressing. Serve as is, chilled or on a bed of greens.

Kale, tomato and grilled chicken cous cous salad

  • one box of roasted garlic and olive oil cous cous cooked according to package directions
  • 2 grilled chicken breasts cut into ½ inch pieces
  • ½ cup of feta crumbled
  • 1 pint (or more!) cherry or sun gold tomatoes halved
  • lacinato kale, ribbed and cut into ¼ inch ribbons
  • juice of one lemon
  • olive oil, salt and pepper to taste

Massage cut kale with ½ lemon juice and set aside for 10-15 minutes. Combine all ingredients and toss. Dress with remaining lemon juice and add olive oil, salt and pepper to taste.
