Lunchboxes #59-63

While we largely rely on leftovers + fruit to fill lunch boxes, here are some non-leftover ideas that we use as filler on days where we don’t have leftovers or what we have doesn’t split nicely into multiple sections (because we HAVE to fill every section every day, right?). Used in combination, these things can also make a pretty nice lunch all by themselves:

  • Veggies! (sliced cucumbers, carrot sticks, tomatoes, peas, avocado, bell pepper, kale chips)
  • Boiled eggs
  • Ham (in theory any deli meat, but this kid LOVES ham)
  • Olives
  • Nuts
  • Cheese
  • Yogurt (we’ll do stuff w fruit for breakfast, but will usually pack plain if it goes for lunch)
  • Hummus (with or without pita bread – he usually just eats it with a spoon)
  • Grilled cheese or cream cheese sandwich
  • Beans (he’ll legit eat them straight out of the can, but you can make them more appetizing with a simple vinaigrette and/or some salsa or feta or something mixed in)

Hope that gives you some trusty lunch ideas without having to cook a whole meal in preparation 😉
