It’s probably not news by now that basically my kid gets leftovers for lunch most days. Some things re-purpose better than others, which is why I LOVE a good grain salad. They usually keep and pack up well, are super versatile – I can either make a big batch of something deliberate over the weekend and use it throughout the week, or grain salads make a great vessel for using up scraps of random stuff in the fridge. I can also usually get Simon to help with some “chop/assemble/stir work”.
Just toss together some grain (rice, quinoa, farro, bulgar, barley, pasta…), protein (lentils, salmon, shrimp, chickpeas, tofu, chicken, cheese…), veggies (avocado, broccoli, sweet potatoes, spinach, asparagus…), and dressing/herbs (I love a simple lemon vinagrette, salsa, or a ginger-sesame dressing). Boom! You have an awesome easy dinner and some super simple leftovers-for-lunch.
