Quick Dinner: Salmon Edition

I don’t know about your family, but in ours, the girls are ready to eat dinner as soon as they get in the car. It might be wise to give them a snack on the car ride home, but instead we power through the 5 minute drive and the first 15 minutes or so at home before dinner is on the table. That’s a pretty tight timeline, so our tactics are to have something that’s quick & easy to make and to engage the girls in preparing the meal to help keep them distracted. One of our go-to options is broiled salmon. We pour a little olive oil on top, sprinkle it lightly with salt, and toss it under the broiler for 5-10 minutes, depending on how thick they fillet is. As I’ve mentioned before, I’m fortunate to work from home most Mondays, which lets me cook a week’s worth of veggies in one day. Here we added green beans & sweet potatoes to our meal. Notice the impatient hand reaching for salmon as I try to snap photos? Sometimes I think our girls were grizzly bears in a past life!

The remaining salmon gets put in the next day’s lunchboxes.
