These waffles are pretty decadent, but are perfect for a weekend morning before an outdoor adventure with the kids.
We’ve found the NYT Cooking App to be a great resource and one of our favorite recipes from there is for Buttermilk-Brown Sugar Waffles.
Ingredients (makes about 8 waffles):
- 2 eggs
- 1 ¾ cups buttermilk
- 1 stick butter, melted and cooled to room temperature
- 1 ¾ cups all-purpose flour or 1 1/2 cups flour and 1/4 cup wheat germ
- 2 tablespoons light brown sugar or 1 tablespoon each white and dark brown sugars
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt

I purchased this amazing waffle iron for my husband for Father’s Day last year. (It had over 3,000 stellar reviews and it has lived up to the hype.) Although, it only makes one waffle at a time, so maybe feed the kids a little something to tide them over until they’re ready.
For a less sugary version, skip the syrup and top with fresh fruit or nut butter.
We freeze the leftover waffles for easy weekday breakfasts – just heat them up in the toaster oven.
Buttermilk is usually sold by the quart. We use the extra for buttermilk scrambled eggs (1 tbsp per egg). Enjoy!
