In our house this is affectionately referred to as a pizza pocket. This can be very easy to make if you purchase refrigerated pizza dough. Thanks to Trader Joe’s who has a whole wheat version. Meat eaters can add pepperoni to the roll. This packs well for lunches too.
- 1 pound of pizza dough
- 1 lb. broccoli, steamed
- 2 cloves of garlic, minced
- 1 cup pizza sauce
- 1 1/2 cups shredded mozzarella
- olive oil
Preheat oven to 400 degrees. Line baking sheet with foil. Divide dough into 4 pieces. On a floured surface roll each piece to 6 x 8 inch rectangle.
Place 1/4 broccoli on each piece of dough leaving a 1/2 inch border. Season with minced garlic, salt and pepper. Top with mozzarella and 1/8 cup pizza sauce.
Starting at the shorter end roll up each pizza pocket and place seam side down on foil lined baking sheet. Cut 2 slits in the top of each pocket. Brush with oil and bake until golden brown, 25-30 minutes. Serve with remaining pizza sauce for dipping.
