English Muffin Pizza

This one is prime for little hands on a mission, or big hands in a pinch. You can save this for a night when you’ve just no time but need a homerun.

Ingredients:

  • English muffins
  • pizza sauce, or pesto, or some substitute
  • some cheese, or some substitute
  • veggies diced – olives, peppers, tomatos, brocolli, etc.
  • whatever else you like on pizza

Preheat oven to 400F.  Split muffins in half and lightly toast.  Remove.  Spread sauce on muffin halves, sprinkle diced veggies and other toppings, then top with cheese.   Bake at 400F for 8 minutes.  Remove, let cool and eat.

When you’ve more time, this is a fantastic little project to let the little hands help with.  Assembling these is tons of fun and quite gratifying.  And rumor has it, it’s so good that kids will want it every night.
