We try to have fish at our house once a week because of all the great health benefits (read: we actually succeed in having fish 1 – 2 times a month). We’ve used this recipe over and over again because our son can’t get enough and that’s always a great feeling!
4 cloves garlic (or more – we can never get enough)
6 Tbs olive oil
fresh herbs, chopped (we use whatever we have – this time, we used thyme, basil, and oregano) – dried herbs will work in colder months, too
1 tsp salt
1 tsp ground pepper
juice from 2 lemons
1 – 2 onions
salmon fillets (however much you need)
Mix together all ingredients and pour over salmon. Marinate in the refrigerator for about 1 hours, turning occasionally. Preheat oven to 375 degrees F. Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in a glass dish, bake 35-45 minutes, until easily flaked with a fork.
We serve it with brown rice and a little side salad.
