Quick Vegan Biscuits

This stand by can be a side to a meal, or a warm breakfast with jam or some other spread-o-choice.  The best part is the simplicity.  Four ingredients and 8-minutes baking time, gives you a dozen or so nice little biscuits.

Vegan Drop Biscuits


1 and 2/3 cups unbleached all-purpose flour (can definitley sub part of this with whole wheat flour)

1 tbs baking powder

2/3 cup soymilk

1/3 cup canola oil, or other non-hydrogenated nondairy butter

Preheat oven to 425 degrees.  Combine all dry ingredients.  Combine the two wet ingredients (can conveniently do this in a one-cup mesuring cup).  Then, mix the wet with the dry, to get a rather firm mix.  Spoon out slightly larger than golf ball size lumps onto a baking sheet.  Bake at 475 degrees for 8 minutes.  Done.

And dont stop there, any mix of herbs and spices can be added to step this one up.
