Quinoa crusted roasted potatoes

This recipe is adapted from “How to Cook Everything Vegetarian” and is super yummy with or without the cheese.  My boys ate them up with a little ketchup and mustard for dipping.  Good as leftovers too or tossed in an omelet.
4 cups cubed potatoes
1 cup quinoa
few whole garlic cloves
2-3 tbsp olive oil
3 scallions (optional)
1 bell pepper (optional)
handful of grated cheese (optional)
boil cubed potatoes for 5 minutes
add quinoa and garlic and boil 5 more minutes
pour into colander (some quinoa will be lost)
pour onto baking sheet and stir in a couple TBSP oil, sprinkle salt
bake undisturbed for 15 minutes
stir with spatula and scrape up any brown bits, then bake again for 10 more min
stir in scallion, red bell pepper, additional seasonings if desired and sprinkle cheese over top before baking another 5 minutes to melt cheese.
